Found out the device name of the "monitor"... using the pactl command...
pactl list | grep .monitor
Now you have a device called pulse_monitor that you can use with arecord
Then added this to the file / create this file: /etc/asound.conf

device alsa_output.pci-0000_00_1b.0.analog-stereo.monitor
}
ctl.pulse_monitor {
type pulse
