Getting an external USB device to be the "default" is surprisingly easy, just comment out a line in the alsa config (as shown below):
 
sudo nano /etc/modprobe.d/alsa-base.conf
 
  # Keep snd-usb-audio from beeing loaded as first soundcard
  # options snd-usb-audio index=-2
 
ALTERNATE:
 
Edit /etc/modprobe.d/alsa-base.conf (create it if needed) and put:
 
options snd-usb-audio index=0
options snd_bcm2835 index=1
